Selection of the best and the oldest parcels of le clos de l'Oratoire des papes
Total de-stemming; cold maceration before fermentation; pumping over, racking, punching down the cap; long vatting in stainless steel tanks with cap submerged.
Wood ageing for 18 months, 80% in new demi-muids (the traditional 600 liter/158 gallon barrel of the Rhone valley) and 20% in 300 liter/79 gallon barrels.
Eye: Deep ruby red color.
Nose: Intense bouquet of ripe fruits (cherry, black cherry), with hints of fresh vanilla, sweet spices and provençal herbs.
Palate: Full-bodied palate, very silky with pure aromas of jammy fruit (strawberry, blackberry) and spicy notes. Superb finish with very elegant tannins.
Good with rabbit cooked with spices and autumn dishes that include wild mushrooms or truffles.
